Newlyn lobster bisque served with crème fraîche & chives
Guinea fowl, pigeon & foie gras presse served with toasted brioche & onion confit
Crisp potato gnocchi served with glazed Gevrik goat’s cheese & confit plum tomatoes
Locally-smoked trout mousse wrapped in smoked salmon served with sweet pickled
cucumber & watercress salad
Mains
Cornish honey-basted roast turkey served with all the traditional trimmings pigs in blankets, chestnut & tarragon stuffing, cranberry compote & turkey jus
Slow-cooked sirloin of Home Farm beef with onion purée, baby onions, bacon, red wine sauce & horseradish
Pan-fried Cornish sea bass fillet served with celeriac purée, buttered spinach, fondant potato, brown shrimp & saffron beurre blanc
Homemade linguini with wild mushrooms, sorrel & artichoke cream
Desserts
Traditional Christmas pudding with warm brandy sauce & Christmas pudding ice cream
Bitter chocolate torte with spiced poached pear & tonka bean anglaise
Calvados pannacotta with blackberry preserve & crisp ginger biscuits
