Christmas leftovers mashup
If you’re anything like us your fridge and cupboards are now full of Christmas leftovers (hands up who had turkey sandwiches for lunch today?) We’ve soured the internet for the best Christmas leftover recipes we could find; from the classic turkey curry to vegetarian friendly spiced rice, with everything from pizza and truffles in-between. And don’t worry – they’re (mostly) healthy!
First up; the classic Turkey Curry. From BBC good food this recipe only has two instructions in the method; perfect for the busy days around Christmas when cooking and washing up are the last things you want to do!
If you’re looking for something a bit less traditional why not try this Turkey, Carrot and Parsnip Quiche from blogger Amelia Freer. As a nutritional therapist her blog is full of healthy recipes and thoughtful pieces on healthy eating and nutrition.
For a slightly warmer and richer dish why not try 30 minute lighter stovetop turkey tetrazzini? From Nora’s blog Savory Nothings. With only one pot used in the whole dish it’s a no-brainer for a post workout treat!
If you’re a vegetarian (or have, finally, tired of turkey) then this Spiced veggie rice with poached eggs dish from Jamie Oliver’s website is a great choice. It’s a bit trickier to make than a one pot dish but looks amazing!
But what’s better than the classic Bubble and Squeak (with gammon and fried egg thrown in for good measure?) We found this recipe on delicious magazine.com – it might not be your Nan’s secret recipe but we’re all up for trying it here!
Our final recipes are from Kate Hackworthy’s blog Veggie Desserts. We love the idea of turning leftover veggies into a pizza to give them a new lease of life. And the Christmas Pudding Truffles with Rum? Well, count us in!
