Meet Steve – Aval Dor Cornish Vodka
Every month we take five minutes with one of our lovely suppliers. This month, we chat to Steve from new Cornish vodka company, Aval Dor. Here’s a quick look into his insider tips, favourite tipple and what he loves most about Cornwall.
Aval Dor is the product of five generations of farming history. The Dustow family moved to Colwith Farm near Fowey back in 1904 and during World War II they started growing potatoes to help feed the nation. This tradition has remained ever since.

WHAT GAVE YOU THE IDEA TO CREATE AVAL DOR?
I noticed a trend for boutique local spirits five years ago and thought why not transform our potatoes into a world class vodka.
What do you love most about Cornwall?
This changes as I enter different stages of my life. At the moment I have three young children and I love the fact that they can grow up surrounded by the sea, the beaches, great local people, and of course our farming lifestyle.

Superb base ingredients, small batches and an expert distiller.

Describe your typical working day
Every day varies immensely. One day we’ll be harvesting our potatoes, the next we’ll be grading and washing them. Another day I’ll be out promoting the vodka or working on a new spirit idea.
What’s your favourite cocktail?
Undoubtedly the Colwith Cosmopolitan. It’s so smooth and refreshing with beautiful citrus notes.

Pop some Aval and tonic in your rucksack, accompanied with some seasonal fruit. Then head to our stunning Cornish coast, find a secluded spot, relax and enjoy Cornwall at its finest.
How long does the vodka process take from potato to glass?
About six weeks. That said, to produce the perfect potato takes six months and the expertise required to do this and subsequently produce a single distilled vodka from scratch takes many years.
