Chocolate Almond Butter Energy Bites

Ingredients

400g (2 cups) medjool dates

200g (1 cup) almonds

4 tablespoons raw cacao powder

2 ½ tablespoons almond butter

2 tablespoons coconut oil

30g (1/2 cup) Desiccated coconut for topping

50g (1/2 cup) Chopped pistachio nuts for topping

50g (1/2 cup) raw cocoa powder for topping

Plate or chopping board

Method

1. Pop the almonds in the food processor and pulse until finely chopped

2. De-stone the medjool dates and add them and the coconut oil into the food processor, pulse until mixed

3. Then add the cacao powder and almond butter and mix again

4. Once all blended together now it's time to roll into balls (about a 1 tablespoon)

5. Place the desiccated coconut, chopped pistachio nuts and raw cocoa powder separately on a chopping board or plate

6. Roll your 1/3 of your bites in coconut, pistachios and cocoa powder

 

Store them in an airtight container to keep them fresh for a week! We love these little bites as an afternoon or a pre-workout snack.
